Dual monitor sounds a reasonable idea, I assume you mean via a extra button to detach and attach to the other screens feed. Though an option for both streams at once would be good, especially for local p2p devices.
The old pi, currently that would require them to divert time to using an old window manager setup. Seems pointless at the moment.
You could try/force Wayland on them. Probably using labwc to be the default. I wouldn't bother too much on the 512/256MB versions, but may just be doable for light work on the 1GB versions.
Mobile/Handheld tech has been on the list from the start, it's just finding a nice way to do it.
Microsoft Remote Desktop had a nice setup last time I used it, but then the OS also work fine with touch way back in Windows 7/8.
Something to aspire to? It may also help out the touch screen display people, but that probably includes a reconfigure of the desktop itself and the ability to switch modes. Touch/mouse, it would be great for accessibility too.
Using desktops on a phone without that is a royal pain.
