Does rpi-connect use STUN (Session Traversal Utilities for NAT) or something else?
I'm sure I saw something from one of the Raspberry Pi guys saying that a STUN server was involved. Also something about the two ends checking if they were on the same network to use a direct connection somehow.

I don't know the details. I've heard of STUN before when I was working with VoIP, but I didn't look into how it worked at the time. I did wonder how the connection worked to get through NAT without all the data going through a central server.
