They don't need to be simultaneous.

I think there are two different tracks here; how to do what the OP initially asked for - simultaneous ADC sampling, and how to achieve what the OP wants to do - power determination.

I agree, the OP doesn't appear to need simultaneous ADC sampling to do what they want to do.
