For a Pi 5 with two magnetic disks, I would fit a small NVMe system disk then attach the two spinning rust devices as separate USB 3 disks so they can use the full speed of both USB 3 paths. An external box makes sense for a Pi 4 where there is only one USB 3 channel but the Pi 5 has two and you have two disks. :D

That very much depends on the enclosure. If it does the RAID it still makes sense to use one with a PI5 - less load on the CPU and less data transfered across PCIe/USB.

If the enclosure just presents everything as a bunch of single drives, then, yes, separate enclosures will give better write performance.

But we're talking about a NAS here where the limiting factor is network speed. I doubt clients will notice the difference.
As to the RAID, I would use the minimum setup so there are no complications like LVM. Label the disks and A, B so you can unplug them then plug them in to another Pi 5 should your dog decide to chew the current Pi 5.

I don't usually recommend RAID as most people asking for it don't understand that backups are still required. If I were to set up RAID1 I'd do it in partitions rather than raw discs. Especially if the drives are of different sizes.
Put the two disks and the Pi 5 in a big box with everything bolted down. Lots of holes for air flow. You might be able to strip the guts out of the Synology box but from what I remember the air flow is pathetic unless there is a fan whining away.

Got an old PC case to hand? Use that. Plenty of space and air flow. ATX PSUs are trivial to start so you can use that to power everything too.
For anyone buying a Pi 5 for this type of project, a 1 TB disk benefits from 4 GB or more to cache the disk directories for fast access. 2 TB? Buy 8 GB of RAM. 2 * 2 TB? Buy 16 GB of RAM. :(

Gonna disagree with that. I'm running a 13TB (total across five drives) NAS on a CM4 1GB. I admit though I don't have more than a couple of simultaneous users.
