I then saw that I needed to hold down the BOOTSEL switch. So I unplugged everything and refollowed the procedure. Thonny did not recognize it and I was unable to see the device in Windows 10.
You probably didn't need to hold down the BOOTSEL button as an unprogrammed Pico will automatically enter BOOTSEL mode when plugged in, button held or not. This would explain why it appeared as a drive the first time without having held down the button.

As to why it's now not showing the drive it's hard to say. Maybe the Pico got programmed with MicroPython so it won't present as a drive, though it should with the BOOTSEL button held, and Windows would usually detect something regardless. Maybe it's a different cable, isn't plugged into the Pico far enough, or the cable which did work now doesn't, or perhaps the Pico got damaged.

Does Device Manager show anything different when it's connected compared to when it isn't ? Does Windows make any acknowledgement sound when plugged in or put an icon in the System Tray ?

Have you tried with another Pico ?
