I use an INA260 to plot cellphone charging. It captures both instantaneous voltage and current (or just power). They sell for $10. I use a USB cable with the VBUS line cut, in order to insert the INA260 connections. It works great for capturing power for any device powered by USB.
The INA260 part has the 2milli ohm sense resistor inside the package and is fully calibrated (unlike INA219 and other boards).
