I would validate with a known good microSD card and a clean install. If that works, start adding in extras. Trying to trouble shoot a complex setup of hardware and software makes finding the root cause difficult.

There certainly seems to be some variation with stability with SSD based configs, especially NVMe SSDs connected via PCIe and a NVME HAT or BASE. It gets even more variable when you try and upclock to Gen 3 speeds. Some of the higher performance SSDs are likely too power hungry to work unless the adaptor allows for the connection of external power.

Concluding the Pi 5 is more temperamental when you are adding extra stuff that is rather likely to be the source of the issue does not seem particularly reasonable.

One path to success is to buy whatever SSD and adaptor, lots of folks have success with. Another it to iterate through combinations before finding one that works.

I can offer that my Pi 5 is rock solid with a Kingston A400 SATA SSD and a Pimoroni NVMe BASE (purchased as a kit with one of their recommended NVMe SSDs). It ran with the Kingston SSD since launch day (was in the first shipment of Pis) and was switched to the Pimoroni BASE as soon as it was launched. Have had zero stability problems.

Multiple folks report decent performance with the Kingston A400 line, and they have the added advantage of being rather inexpensive with low power consumption. The Pimoroni NVMe BASe seems to get better reviews than the Geekworm solutions.
